C is for Chartreuse

My juice pitcher was full to the max with this recipe.  It was my dinner last night, but I couldn't finish the last 6 or 8 ounces.  My husband took care of the rest.  It was sweet and light, with a hint of pepper.  I find that peaches pair well with peppers.  P.S.  I've never had juice this color before.

Tastes Great, and Filling:
1 yellow bell pepper
1 zucchini
1 cucumber
1 c. iceberg lettuce
3 celery stalks
2 peaches
3 oranges

I believe the word for this is "chartreuse".

Strawberry-Tomato-Carrot Juice

In attempt to fend off this cold that my kids keep trying to give me by sneezing on me and wiping their noses on me, I made this vitamin C juice today for lunch.  It's excellent; a little sour and carrot-y, but very satisfying!

Drink Your Vitamins:
1 c. strawberries
1 c. cherry tomatoes
6 carrots
5 stalks celery
1 c. spinach
1 c. green leaf lettuce
3 small apples
1 lemon
Remedy your "cold" vacation.

Squash, Anyone?

My alma mater just finished third in the nation for Rugby.  My husband found the game streaming online and I watched approximately 15 seconds of it until I saw the players running around the field in a huddle.  Speaking of weird sports, I know nothing about squash except what I learned from the movie Bend It Like Beckham.  Oh, wait that was cricket.

Moving on to summer squash, a subject I am much more familiar with.  My favorite way of preparing it is sliced, seasoned, wrapped in foil, cooked on the grill.  But juicing squash is very yummy and rewarding as well.

A Winning Combo:
1 summer squash
3 celery stalks
2 tomatos
4 carrots
1 cucumber
2 oranges
4 strawberries
Score!

Purple Juice!

Huzzah!  Purple juice!  I've been adding red cabbage to my recipes lately, trying to make a pretty purple juice and it has kept turning out brown.  Until today. And now, the long awaited, deliciously understated, mildly mellow, satisfyingly sweet juice recipe!

Purple Prose for You:
2 c. red cabbage
2 c. iceberg lettuce
3 celery stalks
1 carrot
2 apples
2 plums
Optional addition of a little "cheese".

ta-da!

An Apple a Day

We love having loads of apples around.  They are such a great snack for kids and I love adding them to ordinary recipes to make something extraordinary.  Sometimes I grate them and make apple bread or muffins.  Or I chop them and sprinkle them in pancake or waffle batter (with cinnamon, of course!).  And don't forget how delicious sliced apples are in your green salad, accompanied by walnuts.

Sweet Green:
2 c. turnip greens
1 c. iceberg lettuce
3 celery stalks
1 c. grapes
1 apple
1 orange

And Now For Something Completely Different

Yesterday I discovered a practical use for my juicer.  This is not to say that drinking vitamin packed juices isn't beneficial, but I really view it as a nutritional supplement at this point.  So, we had friends over last night and planned on serving Margaritas.  I had purchased a bag of limes and instead of hand-squeezing them as I usually do, I peeled the limes and juiced them in my Breville.

I wanted to investigate the pulp and re-juice it if it seemed really wet.  I discovered to my delight that the citrus pulp was very dry.

Since I had the juicer out and running, I went ahead and made a delicious afternoon energy juice.  It just feels really good to drink a green juice.

Friggin' Heathy Juice:
2 c. spinach
2 c. turnip greens
1 cucumber
1 c. bok choy
3 oranges
1 apple

Taste the Rainbow

This was an accident, I swear.  A beautiful, happy, nutritious, tasty accident.

ROYGBIV:
1 c. strawberries
4 carrots
5 stalks celery
2 c. turnip greeens
1 c. blueberries
1 c. red cabbage
Juice the rainbow.

Before stirring.

Funny how all those beautiful colors mix together to make brown.  Just like my toddler's paintings.

Turning Over a New Turnip Leaf

Well, now that I have bought two pounds of turnip greens, I'll be drinking a lot of "powerful" juice.  Today I used red cabbage with my turnip greens.  The cabbage juice is a rich red-violet color, but once I added all other ingredients, my juice was chocolate brown.

NOT Chocolate:
2 cups turnip greens
1 cup red cabbage
2 carrots
2 stalks celery
1 orange
1 apple
Have you had your Not Chocolate today?

The color of this juice caused my watching children to inhale sharply; it was like pouring sunshine into a glass.  The flavor was no less impressive.  Sweet, fresh, invigorating.

Eight Pounds, Three Ounces Lighter

Life has been pretty good these past five days.  Baby Sasha is healthy, my mom is waiting on me hand and foot, and I am having an ideal recovery from childbirth.  Mom made a boffo-socko juice today and even used the rinds of the pineapple (something I hadn't tried previously).  It was a sweet juice with a brown foam to it, presumably from the pineapple rind.  The juice was so good, in fact that it rivaled the amazing baby gift of Shari's Berries we received from my husband's co-worker.

Grandma's Homestyle Cookin'

2 branches kale
2 carrots
1/2 lemon
1/4 pineapple
1 c. green grapes

Color Therapy

One of my favorite elements of juicing is watching the layers of pure hue stack in the juice pitcher as I feed in each different ingredient.  After I finish, I stir all the colors together and enjoy seeing what color the juice ends up being.

Today I did part beet and part kale thinking that green plus red equals brown...but red won out.  Even my nine year old commented spontaneously, "Wow, the red really dominates the green!"

Full Spectrum:
1/2 beet
2 c. raw kale
2 stalks of celery
2 apples
2 pears
p.s.  Tomorrow my family will eat a loaf of quick bread I made from the pulp of today's recipe...I followed a zucchini bread recipe, but substituted today's very green pulp for shredded zucchini.
